Saving Your Wedding Cake ...

Saving the top tier of the wedding cake to be eaten on the one year anniversary is a tradition many couples choice to honor.

If you are planning on saving your cake, you'll want to plan ahead so that the top tier is preserved carefully.

*  First, as soon as possible, place the cake in the freezer for 1 to 2 hours to quick freeze.
*  Second, remove the cake from the freezer and wrap loosely in plastic wrap.
*  Then place the wrapped cake into a cake box.
*  Finally, cover the box with more plastic wrap and place in the freezer.

These steps will preserve the cake for the year.

When you are ready to eat the cake:

*  Plan to start the thawing process a couple days before you plan to eat the cake.
*  Remove the cake from the freezer for 48 hours to thaw in the refrigerator.
*  Then leave the cake at room temperature 2 to 3 hours to completely thaw.

Eat and enjoy your top tier of the wedding cake, remembering the fond memories of the wedding day.

P.S. Another idea for your first anniversary celebration, if you don't want to freeze your wedding cake, inquire with your baker if they will do a fresh replica of the top tier of your cake for your anniversary.
